Homemade Fruit Snack




Homemade Fruit Snack

Ingredients:

2/3 cup fresh lemon juice or fresh orange juice (if you don’t like sour go with orange!)
2/3 cup frozen or fresh berries (raspberries, blueberries, strawberries are all great.)
1 – 2 Tbs honey
5 Tbs gelatin


Directions:
1. Pour juice and berries into a small saucepan. Heat over medium heat, stirring occasionally until berries become tender and begin to soften.
2. Add honey and stir until completely incorporated. You will want the fruit to dissolve quite a bit until you have a compote.
3. Puree mixture using a immersion blender or small blender (my magic bullet works great for this!)
4. Let sit, off heat, for 5 – 10 minutes.
5. Whisk in gelatin, one tablespoon at a time. Whisk vigorously until completely incorporated, mixing the gelatin in very gradually to avoid lumps. (If you do get lumps, just run the mixture through your blender again or you can put it back on the heat to help dissolve the gelatin.)
6. Pour into a 8 x 8 or 9 x 9 glass dish. Refrigerate until set (30 minutes to an hour). Cut in small squares.

Secret Fruit Salad 

Ingredients:

2 tablespoons dry instant vanilla pudding mix
1 pound of strawberries, quartered
1/2 pint blueberries
1/2 pint raspberries
1/2 pineapple, cubed
1 bunch seedless grapes

Directions: 

Sprinkle fruit with pudding powder and stir. Serve immediately or allow to sit overnight.

(I think it would taste better if allowed to set overnight!  K.M.C)

Make eating fruit fun for your children! Using kiwis, bananas and oranges you can make this adorable palm tree snack.

Angel Food Cake

It's light and airy, low in fat and absolutely delicious! So easy to make a dessert with this cake, as the photo shows. Add a touch of whipped cream, and some fruit and there you have it ~ dessert is served! While I used to make this from scratch, you can find it fairly easy in just about any grocery store.

Easy Fruit Dip


Easy Fruit Dip:

Ingredients:
1 large box instant vanilla pudding
1 1/2 cups milk
1 - 8 oz container of Cool Whip
1/4 teaspoon almond extract


Directions:
Mix together milk and pudding with an electric mixer. Add in Cool Whip & almond extract and beat until well blended. Chill in refrigerator for at least 1-2 hours. Serve with fresh fruit (apple wedges, strawberries, pears, etc.)

Quick And Easy Biscuits


I use this recipe whenever I need a fast addition to a meal, or for a simple breakfast. The recipe can be varied to accommodate your meal. For example, adding garlic powder, onion powder and shredded cheese to the mix when adding the biscuit to a meat and vegetable dinner, or adding a bit of sugar to the mix, with a touch of cinnamon when using as a breakfast or dessert biscuit topped with fruit and whipping cream. (You can even add orange juice in place of the milk for a spin on flavor!)


Simple Baking Mix Biscuits

2 1/4 c. baking mix (such as Bisquick)
2/3 c. of milk 

Preheat oven to 450 degrees. Gently combine ingredients until wet and lumpy. Drop by spoonfuls onto a lightly greased baking sheet. Bake 8-10 minutes, or until golden brown.
