Are you ever looking for a simple way to make cinnamon rolls? Well, I've found one! Purchase a fresh package of pizza dough from your local grocery store. (Not the frozen kind.) Divide it in half and put one portion in a lightly greased, large bowl. Cover loosely with Saran Wrap. Once it has risen to about double, punch down and turn out onto a floured counter.
Roll the dough into a large, fairly thin rectangular shape. Spread a layer of soft, NOT melted, butter over all, then sprinkle generously with sugar and cinnamon. Starting at one narrow end, roll to the other end making a log. Lightly grease a glass, deep dish pie plate. Using a sharp knife, cut the log into rounds, placing each round into the pie plate, fitting in snuggly with others so that all sides are touching.
Cover loosely with Saran Wrap that has been coated with a thin layer of butter so that the rolls don't stick to it as they rise. Once they are near double in size, turn on oven to 350 degrees. Remove Saran Wrap and place rolls into the oven on the middle rack. Bake approximately 20 -25 minutes, or until golden brown on the top and sound hallow when tapped with your finger.
Allow to cool. In a medium bowl, mix some confectionery sugar, water and vanilla extract to make a glaze that can be drizzled over the top of all the rolls. I served these yesterday to my daughter and her girlfriend and they loved them!
